"Burong
Talangka" found throughout the province. "Talangka" is
the local name for the mini crabs, and they are sautéed in garlic and
stored in bottles of varying sizes. They are eaten with the juice of
"kalamansi", a smaller variation of lemon. "Burong
Talangka" is fondly called the native caviar.
"Tamales" or
"Boboto" mainly from the barrio Cabalantian. Made of the
glutinous kind of rice, called "malagkit", it is loaded with
chicken, shrimps and salted eggs. The whole delicious mix is wrapped in
banana leaves.
"Batute"
harvested from the rich rice fields of the province. These may well be the
world's tastiest frogs. Marinated in vinegar and soy sauce, the
"Batuteng" is one of the dishes that put Pampanga on the
culinary map of the Philippines.
"Pastillas"
made of Carabao milk can be found practically in every barrio. It is
ideally served while still hot from the pot.
At the town of Sta. Rita,
visitors can have the tastiest Sans Rival and Turrones de Casoy.
Throughout Pampanga are stores that boast of "Tocinos",
or sweetened pork meat, "Longganiza" or native sausages,
and "Tapas" or salted beef.
